Apr. 10th, 2014 09:53 pmSo after yesterday I was like, "Damn, it sucks being only to do half the things here," so this morning I tried making a little nigiri and it didn't turn out as hideous as I feared it would. Not the firmest sushi in the world but it looked fine at the least. Which was a good thing because Fernando had to plan for the event at Canyon tomorrow, wasn't even wearing his jacket or bandanna, so when I showed him the ticket with the nigiri orders on it he was like, "Can you do it? Just try it." And I was like, "Damn." I want to learn, but I didn't think I would be thrown into the deep end just like that. Uzziel watched me and he told me to fix the rice on the ebi nigiri but had no comment for the others, which is not a bad thing.
I mean, today was progress. I fabricated salmon, did nigiri and sashimi, and did tickets. We were pretty busy, the bar was nonstop until quarter past 7 but maybe that was because I may as well have been alone. Max was with me but he's honestly kind of useless because he's still pretty fresh into training. It's like having a quarter of a very slow person.
Actually, I know he's fresh into training but he could still learn faster. He's kind of unbearably slow and he still doesn't know half the rolls. It shouldn't take longer than a weekend to learn those. I like him just fine, he's a really nice kid, but when I'm working alone with him I get frustrated because he's not much help at all. He can do handrolls, cali, spicy tuna, spider, sierra wave, and crackle rolls as far as I know. Not very much. I don't think he can do hosomaki, and of course he can't do nigiri/sashimi.
Tomorrow is that event at Canyon tomorrow, Fernando seems really pissed about it and I think he's going to have Uzziel help him make rolls for it. I don't know if Fernando will be done by 5, but I'm hoping he will be because I'm otherwise going to be alone, on Friday, with Happy Hour. It's not a big deal because our only Happy Hour thing is handrolls, but it is busier for sure. Eloy doesn't come until 6. I don't know if Fernando is going to leave Max with me, or take him to Canyon. I guess it won't really matter.
You know, I feel a lot better about myself knowing that I can work the bar alone if I must, now. I think Fernando really wants to me to do more stuff already because last weekend he asked me to make a cucumber wrap as well, and I'd never done it before. He'd never even really shown me, but I'd watched him make one once so I was able to deal with it, especially because it was for a dynamite roll and those things are plated flat anyway. Nobody would notice a wonky cucumber wrap for that. ....Either that or he was just super over it.
